Welcome to 'simple but yummy' GF cooking! Fruit Squares!

Gluten/Dairy Free Fruit Squares

Two years ago my daughter discovered that she was gluten intolerant, and, as she was told that it could be genetic, I took myself off to get tested, and the tests came back positive! So, after years of suffering (I won’t bore you with the details) I too am on a gluten free diet! (No more stomach cramps!! Whey hey!!)(My daughter says, ’Thanks mum for passing on your cr*ppy genes’!)(Excuse the pun!)

The price of gluten free foodstuff is expensive and so over the last couple of years I have striven to put together a few, what I consider to be, simple recipes! And believe me, people don’t come much simpler than this cake and pastry enthusiast! (Oh, for a doughnut!! Or a packet of Party Rings!!)

My first offering is easy to make, but delicious - Fruit Squares

(My gluten tolerant friend says she can’t tell the difference!!)

My credentials: I’ve been home cooking for longer than I care to remember!

Gluten Free, (Dairy Free), Fruit Squares

Ingredients:

5oz/150g marg
5oz/150g sugar (I use granulated)
½ teaspoon vanilla extract
5oz/150g gluten free SR flour (Doves Farm is good)
½ teaspoon xanthan gum
2 eggs
6oz/175g dried fruit to your taste (I use raisins/sultanas/glace cherries)
Water for mixing to a soft consistency (seems to work well with the g/f flour)

7” square tin
Bung it all in!
 Soften marg (this is important!), add all the other ingredients, except the water! (None of the usual creaming and faffing in this recipe!) Give the mixture a good beating until it is ultra-smooth with plenty of air incorporated. (I find a big spoon is ideal for this process.) Add cold water if necessary to make a ‘soft’ consistency.
Smooth into 7"squre tin
 Smooth into the greased and baking parchment lined tin and bake in the middle of a conventional oven for 25 minutes at 180o, check after 20 minutes.
(Fan ovens will take a little less time and slightly less heat, 170o for about 20 minutes.)

The cake is cooked when it’s nice and brown and springs back when pressed in the middle with a clean finger!
Springy to the touch!
 Cool slightly, cut into 12 squares, leave in the tin to cool completely!
